Ingredients
  1. ¼ cup lemon juice
  2. 2 T extra virgin olive oil
  3. 1 T raw honey
  4. 2 tsp. ground ginger or 1 T fresh ground ginger
  5. Celtic sea salt, to taste
  6. 3 cups shredded beets
  7. 3 cups shredded carrots
  8. ½ cup fresh parsley, chopped
Instructions
  1. Mix all ingredients except beets & carrots in a large bowl.
  2. Add beets & carrots.
  3. Toss to combine.
  4. Let marinate 2 hours, if desired.
