Lemon, Ginger, Carrot & Beet Salad


  • ¼ cup lemon juice
  • 2 T extra virgin olive oil
  • 1 T raw honey
  • 2 tsp. ground ginger or 1 T fresh ground ginger
  • Celtic sea salt to taste
  • 3 cups shredded beets
  • 3 cups shredded carrots
  • ½ cup fresh parsley chopped


  • Mix all ingredients except beets & carrots in a large bowl.
  • Add beets & carrots.
  • Toss to combine.
  • Let marinate 2 hours, if desired.
