Ingredients
- ¼ cup lemon juice
- 2 T extra virgin olive oil
- 1 T raw honey
- 2 tsp. ground ginger or 1 T fresh ground ginger
- Celtic sea salt, to taste
- 3 cups shredded beets
- 3 cups shredded carrots
- ½ cup fresh parsley, chopped
Instructions
- Mix all ingredients except beets & carrots in a large bowl.
- Add beets & carrots.
- Toss to combine.
- Let marinate 2 hours, if desired.
