Lemon, Ginger, Carrot & Beet Salad

Ingredients

lemon juice

extra virgin olive oil

raw honey

tsp.
ground ginger or 1 T fresh ground ginger
Celtic sea salt
to taste
3
cups
shredded beets
3
cups
shredded carrots
½
cup
fresh parsley
chopped
Instructions
Mix all ingredients except beets & carrots in a large bowl.
Add beets & carrots.
Toss to combine.
Let marinate 2 hours, if desired.
